Peanut & Tofu Sweet Chilli Stir-fry

Creamy tofu in sweet chilli peanut sauce and vegetables with fluffy rice – it’s a deliciously healthy midweek vegan dinner.
Doubles as a dip…
Serves 2
250g Tofu extra firm
2 tbs sesame oil
2 crushed garlic cloves
300g pack of stir fry vegetables
2 nests of dried egg noodles (boiled)
1 tbsp heaped peanut butter
Third of a jar Thai Sweet Chilli
1 tbsp soy sauce
1 tbsp cornflour
1. Cut tofu into chunks & flour
2. Heat the wok hot
3. Add tofu & oil into wok
4. Stir fry until cooked
5. Add the stir fry veggies
6. Stir fry until cooked
7. Add the egg noodles
8. Add sweet chilli & peanut
9. Blend soy & cornflour
10. Stir through and Serve
