Mushroom & Tofu Sweet Chilli Stir-Fry

MUSHROOM & TOFU SWEET CHILLI STIR-FRY

Sweet Chilli, Tofu and Veggies; a naturally tasty vegan stir-fry with crispy tofu, mushrooms and sweet red peppers.
 
 
 
 
 
Doubles as a dip…
Serves 2
250g Tofu extra firm
2 tbs sesame oil
2 crushed garlic cloves
1 red pepper sliced
250g Chestnut mushrooms sliced
2 nests of dried egg noodles (boiled)
Third of a jar Thai Sweet Chilli
1 tbsp soy sauce
1 tbsp cornflour
 
1. Cut tofu into chunks and flour
2. Heat the wok hot
3. Add tofu & oil into wok
4. Stir fry until cooked
5. Add the sweet red peppers
6. Stir fry until cooked
7. Add the egg noodles
8. Add Thai sweet chilli
9. Blend soy & cornflour
10. Stir through and Serve
