Chicken, Pineapple And Peanut Curry

The fruity and nutty flavours of pineapple & peanut with Thai spices pair so well with chicken in this fragrant curry. Serve with Rice.

Serves 2
350g chicken fillet strips
1 tbsp groundnut or veg oil
2 sliced red onions
1 tbsp green curry paste
165ml can coconut milk
1 tbsp cornflour
Third of jar pineapple sweet chilli
1 tbsp peanut butter
1 small bunch of coriander
1. Slice chicken fillet in strips
2. Heat saucepan hot
3. Add oil & chicken into pan
4. Fry only half minute
5. Add onion & curry paste
6. Stir fry until cooked
7. Add coconut milk & cornflour
8. Add peanut butter & stir
9. Add pineapple sweet chilli
10. Serve & garnish plenty coriander
