Thai Green Coconut Chicken Stir Fry

Thai green stir fry chicken with creamy coconut, vegetables and mango sweet chilli – it’s a healthy and delicious midweek dinner.

Serves 2
250g chicken sliced in strips
1 tbsp sesame oil
1 sliced red onion
1 pk mange tout & baby corn
250g pk fresh egg noodles
150ml coconut milk
1 tbsp cornflour
Third of a jar Mango Sweet Chilli
1 tbsp Thai green curry paste
1. Slice chicken into strips
2. Heat wok hot
3. Add oil & chicken into wok
4. Fry until cooked
5. Add all the veggies
6. Stir fry until cooked
7. Add fresh egg noodles
8. Add coconut milk & cornflour
9. Add mango sweet chilli & stir
10. Serve into noodle bowls
