Thai Basil Chicken Stir Fry

Thai Basil Chicken is adapted from an authentic Thai stir fry; tender chicken, sweet red onions, Jalapenos, warming basil and mango sweet chilli.

Serves 2
250g chicken cut into strips
2 tbs sesame oil for wok
2 sliced jalapeño chillies
1 pk of 30g basil leaves
2 red onions sliced
2 cups of white rice then boil
Third of a jar Thai Sweet Chilli
1 tbsp dark soy sauce
50g cashew nuts
1. Cut chicken into strips
2. Heat the wok hot
3. Add chicken & oil into wok
4. Stir fry until cooked
5. Add the onions & garlic
6. Stir fry until cooked
7. Add mango sweet chilli
8. Season with dark soy
9. Add basil leaves & cashews
10. Stir and serve with rice
