Thai Fish Cakes And Coconut Sweet Chilli

Fish cakes are a popular appetiser in Asia, this easy recipe is spiced with Thai curry paste and served with a coconut sweet chilli dipping sauce.

400g pollock/ white fish fillets
1 egg
1 tbsp red curry paste
2 tbsp fish sauce
1 tbsp cornflour
zest of 1 lime
2 tbsp veg oil for frying
coconut sweet chilli dipping sauce
1 bag of mixed salad
1. Add fish to food processor..
2. .. and ingredients up to zest
3. Blitz until fine chopped
4. Form into small patties
5. Add oil to fry pan
6. Cook 2 mins both sides
7. Pile salad and patties on plates
8. Squeeze lime juice over
9. Serve with coconut sweet chilli
