Thai Coconut Tofu Noodle

Quick-and-easy, Thai style tofu noodle soup is fresh tasting with sweet & sour Asian flavours.
Doubles as a dip…
Serves 2
1 pk 225g tofu
2 pints vegetable stock
1 pack of mange tout sliced
Juice of half lemon to taste
300g fresh vermicelli noodles
2 tbsp coconut sweet chilli
2 spring onions sliced
1 small bunch coriander
1 tbsp soy sauce
1. Boil water and stock in pan
2. Slice mange tout in long strips
3. Add to stock cook 2 minutes
4. Add vermicelli into bowls
5. Add tofu into bowls
6. Mix noodles and tofu
7. Fill bowl with stock & mange tout
8. Scatter chopped coriander, onions
9. Add coconut sweet chilli sauce
10. Season with splash of soy.. lovely
