Spicy Thai Peanut Curry

SPICY THAI PEANUT CURRY
 
The nutty flavour of peanut, coconut and spices pair so well with tofu in this fragrant spicy Thai curry. Serve with Basmati Rice.
 
 
 
 
 
Doubles as a dip…
Serves 2
350g tofu cut into cubes
1 tbsp vegetable oil
2 sliced red onions
1 tbsp green curry paste V
165ml can coconut milk
1 tsp cornflour
Third of jar coconut sweet chilli
1 tbsp peanut butter
1 small bunch of coriander
 
1. Slice tofu into cubes
2. Heat saucepan hot
3. Add oil & tofu into pan
4. Fry only half minute
5. Add onion & curry paste
6. Stir fry until cooked
7. Add coconut milk & cornflour
8. Add peanut butter & stir
9. Add coconut sweet chilli
10. Serve & garnish plenty coriander
