Chicken And Mini Corn Noodle Soup

Quick-and-easy, Thai chicken & mini corn noodle soup is fresh tasting, with sweet and sour Asian flavours.
Doubles as a dip…
Serves 2
200g rice noodles
2 pints chicken stock
1 pk mange tout & mini corn sliced
1/2 red pepper short sliced
2 tbsp coconut sweet chilli
1 tbsp Thai green curry paste
1 pk 225g chicken sliced
2 spring onions sliced
1 tbsp fish sauce
1. Add stock & water to pan
2. Bring stock to boil
3. Add rice noodles
4. Simmer 5 minutes
5. Add sliced veg to pan..
6. Cook soup for 2 minutes
7. Add curry paste & coconut chilli
8. Pour soup into bowls
9. Scatter chopped spring onions
10. Add a splash of fish sauce.. lovely
