Asian Prawn Rice Noodle Soup

Quick-and-easy, prawn noodle soup is the ideal healthy midweek food, and it’s full of sweet and sour Asian flavours.

Serves 2
1 pk 225g cooked prawns
2 pints chicken stock
1 cup of frozen peas
2 red chillies sliced
2 spring onions sliced
1 small bunch coriander
300g fresh vermicelli noodles
2 tbsp plum sweet chilli
1 splash soy sauce
1. Trim & slice spring onions
2. Boil water and stock in pan
3. Add peas cook 2 minutes
4. Add vermicelli into bowls
5. Add prawns into bowls
6. Mix noodles and prawns
7. Fill bowl with stock & peas
8. Scatter chillies, coriander, onions
9. Add plum sauce
10. Season with splash of soy
