Spicy Thai Pork Curry

Pork curry that’s sweet, spicy and fragrant; a tasty combination of typically Thai flavours with red curry paste, coconut and apple sweet chilli.
Doubles as a dip…
Serves 2
350g pork fillet cut in strips
1 tbsp groundnut or veg oil
2 sliced spring onions
80g baby corn sliced
1 tbsp red curry paste
165ml can coconut milk
2 tbsp smooth peanut butter
Third of jar apple sweet chilli
1 small bunch of coriander
1. Slice chicken fillet in strips
2. Heat saucepan hot
3. Add oil & chicken into pan
4. Fry only half minute
5. Add onions & curry paste
6. Stir fry until cooked
7. Add coconut milk
8. Add peanut butter & stir
9. Add apple sweet chilli
10. Serve & garnish plenty coriander.. gorgeous!
