Lemon Butter Chicken

Lemon butter chicken is so delicious; flattened pan fried chicken finished with freshly squeezed lemon, creamy butter and apple sweet chilli.

Serves 2
250g – 2 chicken breasts into strips
2 tbsp butter
2 cloves chopped garlic
Half a fresh lemon squeezed
2 tbsp apple sweet chilli
1 tsp ground black pepper
2 portions Tilda coconut rice
1 small bunch parsley
1 bunch asparagus
1. Butterfly chicken breasts
2. Heat fry pan hot
3. Add chicken, garlic, butter
4. Fry until cooked
5. Add lemon to pan
6. Add apple sweet chilli to pan
7. Stir until like thin gravy
8. Boil asparagus & heat rice
9. Plate up rice, chicken, asparagus
10. Sprinkle with parsley
